Egg is a common daily food. Most people know it is nutritive, but few know what specific functions egg has.

First, egg prevents cancers. It contain rich vitamin B 2 which decomposes and oxidizes carcinogens. Trace minerals such as selenium and zinc also can prevent cancers. According to some analysis, the intake of selenium can reduce the death of cancers. People with more selenium in the blood are less likely to get cancers.

Second, it protects the liver. Proteins contained in eggs repair the damaged tissues. Lecithin in the yolk can promote the regeneration of liver cells, increase plasma proteins and improve the metabolism and immunity of human beings.

Third, it delays aging. Egg contains almost all nutrients that the human bodies need and thus, it is called “ideal nutritional punch”. Many long-life men say their secret to live longer is to eat an egg every day. Besides, many recognized medicated diets contain eggs.

Fourth, it promotes memories. As it contains lecithin, triglyceride, cholesterol and lututrin, it helps the growth of the nervous system and human bodies. When lecithin is digested, it releases choline which gets to the brain by blood. As a result, people’s memory ability can be promoted.

And thus, no matter the youth or the elder, he can keep a good memory as long as he eats one or two eggs per day.

Fifth, it prevents and treats arteriosclerosis. When American nutritionists and medical workers used eggs to treat arteriosclerosis, they’ve got unexpectedly good result. They extract lecithin from eggs, nuts or pork livers and let patients with cardiovascular disease eat four to six spoons of it.

Most people would wonder is yolk more nutritive or egg white. In fact, both are high quality proteins, easy to digest. But they contain many different nutrients. Egg white mainly contains egg albumin while yolk contains rich lecithin, fat, vitamins, trace minerals, especially iron, phosphorus, vitamin A, D, E, and B.

The other confusion: are raw eggs more nutritive? Eggs are easy to be infected by salmonella and other bacteria. And cooked eggs are easier to be digested as their structure is comparatively loose. Of course, when eggs are over cooked, proteins excessively solidify and as a result, they become less digestible.
